Italian Chicken Pasta Bake


6 chicken breast (boiled and cut bite-sized)
1 large onion (diced)
1 bell pepper (diced)
6 large mushrooms (sliced)
3 cans Hunt's diced tomatoes
3/4 tsp. garlic powder
1 tsp. basil
1 tsp. oregano
1 tsp. parsley
1/2 tsp. thyme
1 bay leaf
1/2 cup parmesan cheese
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 pkg. pasta of your choice


Set chicken aside after cutting bite-sized. In a sauce pan, mix tomatoes,onions, bell peppers, mushrooms and spices. Simmer until onions and peppers are tender. Add chicken. Simmer 30 minutes. Remove bay leaf. Cook pasta al dente. Add parmesan cheese to the tomato sauce. Spray a 9"X 13" baking dish with Pam. Put drained pasta in bottom. Spread chicken and tomato mixture over the pasta. Top with mozzarella and cheddar cheese.Bake at 400 degrees until cheese melts.

Note: Bowtie pasta makes this a beautiful dish!
