Low Fat Hot Potato Salad


6-8 large potatoes
1 large onion (diced)
1 bell pepper (diced)
1 small jar pimiento (drained)
1 lb. Healthy Choice cheese (like Velveeta, cubed)
1/2 tsp. garlic powder
1 tsp. Mrs. Dash


Boil potatoes in large cubes. Drain well. Melt cheese with all other ingredients and a tad of milk of necessary in microwave on medium heat. Add potatoes. Serve hot.
