1 pkg. yellow cake mix, divided
1/2 cup butter or margarine, melted
1 egg
1 cup chopped pecans
Filling:
2/3 cup reserved cake mix
1/2 cup brown sugar
1 1/2 cups dark corn syrup
1 teaspoon vanilla
3 eggs
Grease 13 x 9 pan. Reserve 2/3 cup dry cake mix for filling.
In large mixing bowl, combine remaining dry cake mix, butter,
and 1 egg; mix until crumbly. Press in prepared pan. Bake
at 350F for 15 - 20 minutes or until light golden brown.
Meanwhile, prepare filling.
Filling: In large mixing bowl, combine all ingredients; beat at
medium speed 1 - 2 minutes. Pour filling over partially baked
crust; sprinkle with chopped pecans. Return to oven and bake
for 30 - 35 minutes, or until filling is set. Cool. Cut into 36
bars.
Note: I substituted a butter pecan cake mix in this and my family liked it even better than the yellow cake mix. I think it would also be a nice change to substitute a chocolate mix also.
