Pico de Gallo


12-15 Roma tomatoes, diced
1 large onion, diced
2 Tbsp. diced Jalapenos
1/2 cup fresh cilantro, chopped fine
2 cloves garlic, pressed
1 Tbsp. olive oil
1 Tbsp. white vinegar
2 Tbsp. lime juice, fresh squeezed


Peel tomatoes, then chop. Mix all ingredients together in large container until well blended. Chill and serve.


Note: This is better made the day before! Serve with tortilla chips or as a topping for fajitas, tacos, grilled chicken, hamburgers, etc.
