Red Beans and Rice
1 small bag dried red beans
1 large onion (diced)
1 bell pepper (diced)
1/2 cup celery (diced)
1 pkg. lowfat smoked sausage
2 tsp. red pepper flakes
1/4 tsp. red cayenne pepper
1/2 tsp. garlic powder
1 tsp. cumin
3 cups cooked rice
Soak beans. Wash and drain them. Cook them with onion, peppers, celery and spices until beans are tender. Add sausages and simmer 45 minutes. Serve over hot rice.
