Spicy Beef and Potatoes
2 lb. stew beef
1 can diced tomatoes or Ro-Tel
4 potatoes, peeled and cut in chunks
3 cloves garlic minced
1 tsp. each of oregano, cumin and chili powder
1/2 c. BBQ sauce
1/4 c. salsa
1 pkg. frozen corn
1/2 tsp. pepper
2 Tbsp. flour or cornstarch
Place potatoes in the bottom of the crockpot. Combine all ingredients except corn and cook on low for 7 hours or high for 4 hours. Add corn during the last hour. If it is too thin, thicken with cornstarch and water mixture.
Note: We like to add cooked rice to this and serve it in a bowl like a thick, spicy stew. Cornbread compliments it well.
