Stuffed French Toast
1 loaf Texas Toast
4 Granny Smith apples (peeled, cored and sliced)
3/4 cup brown sugar
1/4 cup butter
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
1/4 tsp. allspice
1 tsp. vanilla
1/2 cup walnuts (chopped coarse)
1-8 oz. bar cream cheese
6 eggs
2 tsp. vanilla
1 tsp. cinnamon
1/4 cup milk or cream
Mix apples with the 7 ingredients following them. Cook apples to desired doneness in a saucepan. I like mine a little firm. Cool completely. Add softened cream cheese and mix well until apples are saucy. Spread mixture between 2 slices of bread. Beat eggs with vanilla, milk and cinnamon. Dredge each side of bread in the egg mixture until well coated. Using with a small amount of butter fry in a hot skillet on each side until golden brown. Serve hot with maple syrup.
