Swiss Vegetable Medley


1 bag broccoli, cauliflower and carrots
1 onion, diced
1 can cream of chicken soup
1 cup shredded Swiss cheese
1/3 cup sour cream
4 oz. pimientos
1 can French fried onions


Preheat oven to 350°. Combine veggies, soup, 1/2 cup cheese, sour cream, pimientos, and 1/2 the can of onions. Bake 30 minutes. Sprinkle remaining cheese and onions in diagonal rows and bake 5 additional minutes to melt cheese and toast the onions. Yield: 6 servings

This is one of the yummiest casseroles I make. Our minister of music requests it everytime we have a church pot luck! Hope you and your family enjoy it!
