2 Cups Water
250 g Chopped Butter
1 tsp Baking Soda
3 tsp Baking Powder
3 Cups Sugar
1/3 Cup Cocoa
3 Cups Flour
4 Eggs Lightly Beaten
Grease a very large cake tin, or one medium sized cake tin and a loaf tin, line with paper. Combine water, sugar, cocoa, butter and soda in a large pot and stir over heat without boiling until sugar is dissolved, bring to boil and simmer uncovered for 5 minutes. Keep a close eye that pot does not boil over. The soda will make it boil over if not careful. Transfer to a large bowl and cool for 10 minutes. Add flour and eggs, and beat until mixture is smooth. Pour into tin/s and bake at 180ºC for 50 minutes, or until cooked. Turn onto a wire rack to cool. When cold ice with the following fudge icing, or you can just ice with a normal chocolate icing, which I prefer to do to save time, but for special occassions, the fudge icing is worth the effort.
FUDGE ICING
90 g Chopped Butter
½ Cup Sugar
1/3 Cup Water
Put in pot and stir over heat without boiling until sugar is dissolved. Sift ½ Cup Icing Sugar and 1/3 Cup Cocoa into a bowl and pour over hot mixture and stir in. Refrigerate until cold and thick then beat until mixture is spreadable.
this cake is so moist, and freezes well also.
