Banana Bread from Trisha (tphibbs)
Mash 1 cup on banana with fork (approx. 3 bananas)
Add 1 cup of sugar
1/4 cup oil
1 eggMix together
Sift in 1 1/2 cup flour
1 tsp. baking soda
1/4 tsp. saltGrease and flour loaf pan or line with foil.
Bake 1 hour or until probe comes out clean. If needed (I usually do)
put back in for 10 minutes (especially if you have extra banana in it).Chicken Enchiladas from Kristin (Nitsirk)
My MIL gave this great recipe for Chicken Enchiladas - It freezes great too!
SAUCE:
1 1/2 c chopped onion - cook in oil then ADD:
2 16oz cans tomatoes - cut up
1 15oz can tomato sauce
2 cloves garlic - minced
2-3 tsp sugar
2 tsp salt
2-3 tsp chili powder
Simmer uncovered for 30 minutesBoil 2 Cups chicken until done - shred with a fork when cool to the touch
Combine Chicken with:
1/2 c sliced green onions
3 tbls chopped black olives (I leave this out.. yucky..)
1 c sour cream
2 tsp chili powder
3/4 tsp saltWarm tortillas in microwave to soften.
Top each with 2 tbls filling and 1 tbls shredded cheese (any type you like -
I shred 1 c sharp cheddar & 1 c monterey jack)
Fold in sides and rollup - place seam down in 9"x13" pan. Pour sle with
cheese and olive slices. Bake at 350degrees for 30 minutes until heated
through.Hint: Can use bottled salsa instead of making sauce...

Caramel Apple Cheesecake - By Auntylor
1 1/2 cups all purpose flour 375ml
1/2 cup margarine 125ml
3/4 cup sugar, divided 175ml
1 egg yolk 1
2 tbsp margarine 30ml
2 apples, peeled, cored & 2
thinly sliced
20 vanilla caramels 20
1 1/2 tsp milk 7ml
2 pkgs (250g each) cream cheese 2
1 tsp vanilla 5ml
2 eggs 2
Chopped toasted hazelnutsCombine flour, 1/2 cup margarine, 1/4 cup of the sugar & egg yolk. Blend well. Press dough onto bottom & 1 inch
(2.5cm) up side of 9 inch (23cm) springform pan. Bake at 400F (200C) 15 min. Melt 2 tbsp margarine in large fry
pan. Add apples; cook unitl tender. Arrange apples on baked crust. Melt caramels with milk, stirring over low heat;
drizzle over apples. Beat together cream cheese, remaining 1/2 cup sugar & vanilla. Add eggs, one at a time, beating
well after each addition. Pour cheese mixture over caramel-apple layer. Bake at 325F (160C) 35 min or until set.
Cool; chill. Slice & serve with Caramel Sauce (see below) & nuts. Makes 12 servings.Caramel Sauce: Melt 20 caramels with 1/4 cup (50ml) milk, stirring over low heat. Makes about 2/3 cup (150ml).
Preparation Time: 30 minutes Baking Time: 35 to 40 minutes
I've haven't made this yet, but it sounds good and looks even better in the picture.
Apple Crisp from Railana
----- Preheat oven to 375F Grease a 3 quart square casserole dish
Cream together - 3/4 cup rolled oats - 5/6 cup butter or margerine - 2 cups lightly packed brown sugar
Stir in until crumbly - 1 1/8 cup Cake and Pastry Flour
Add cinnamon to taste..
Arrange in dish - 6 to 9 peeled and sliced apples
Sprinkle with crumbs
Bake in preheated oven for 40 minutes, or until apples are tender and toppig is golden brown.

Pumpkin Bread from Barbalarb
Wet Ingredients: 3 Cups sugar 1 Cup oil 4 eggs 1 Cup water 2 Cups pumpkin (canned or fresh)
Dry Ingredients 3 1/3 Cup flour 1 1/2 tsp salt 2 tsp baking soda 1/2 tsp baking powder 1 1/4 tsp ground cloves 1 1/4
tsp cinnamon 1 tsp nutmegMix the Wet ingredients in one bowl, mix the dry ingredients in another bowl. Pour the dry ingredients into the Wet
ingredients slowly, mixing the whole time. Bake for 1 hour at 325 degrees in 3 small loaf pans.Enjoy! Happy Thanksgiving to all you Canadians out there!
