JUMBO MOLASSES COOKIES

1 CUP SUGAR

1/2CUP SHORTENING

1 CUP DARK MOLASSES

1/2 CUP WATER

4 CUPS FLOUR

1 1/2 TSP. SALT

1 TSP. BAKING POWDER

1 1/2 TSP. GROUND GINGER

1/2 TSP. GROUND CLOVES

1/2 TSP.GROUND NUTMEG

1/4 TSP GROUND ALLSPICE

Mix 1 cup sugar and shortening. Mix in remaining ingredientsl Cover and refrigerate at least 3 hrs. Heat oven to 375 degrees. Roll dough to 1/4 in. thick. Cut in 3 in. circles. Sprinkle with sugar. Place on well greased sheet. Bake until almost no indentation remains when touched. 10-12 min. Cool 2 min. before removeing from sheet.


Grandma's Pumpkin Cookies [my favorite]

2 CUP SUGAR

1 CUP SHORTENING

2 CUP PUMPKIN

4 CUPS FLOUR

2 TSP. SALT

1 TSP. BAKING SODA

1 1/2 TSP. CINNAMON

2 CUPS CHOCO. CHIPS

1/2 CUP NUTS

Mix WET INGREDIENTS, ADDING ONE AT A TIME, AND MIXING WELL AFTER EACH ADDITION. MIX DRY INGREDIENTS TOGETHER WELL. ADD DRY INGREDIENTS TO WET SLOWLY, MIXING WELL. ADD CHOC CHIPS AND NUTS. Heat oven to 375 degrees. Place on well greased sheet. BAKE 15 MIN. Cool 2 min. before removeing from sheet.


Creole Chicken

1-chicken cut up & cleaned

1-16 oz can of chopped tomatoes

1 16 oz. can tomatoe sauce

1 onion sliced
1 can of sliced olives

1 cup sliced mushrooms
Flour

salt & pepper
3 tbls olive oil

In an electric skillet or deep frying pan heat olive oil. Saute mushrooms and onions. Dredge chicken in flour with salt and pepper. Remove mushrooms and onions from oil, put aside for later. Place chicken in oil and brown on all sides. After the chicken is browned add all the remaining ingredients, reduce heat to a simmer and cook for 20-30 min. until chicken is done and sauce has reduced. This is great with the sauce served over rice. Enjoy!!
