1 French Baguette
3 Roma tomatoes seeded and chopped
1 onion minced
1 clove garlic - chopped
1/2 teaspoon dried basil
1/2 teaspoon oregano
Pinch of salt
Pinch of black pepper
1 tablespoon olive oil
8 ounces mozzarella cheese - cubed
In a small mixing bowl, combine tomatoes, onion, garlic, basil, oregano,
oil, salt, pepper, and cheese. Mix well, cover, and refrigerate.
Preheat oven to 375 degrees
Cut bread into slices (12) on diagonal. Arrange bread on cookie sheet.
Brush tops with olive oil and toast in oven.
Spoon mixture onto top of toasted slices and serve.
Best if prepared ahead.
Onion & Bacon Quiche
5 mediums onions - thinly sliced
1/4 cup margarine
3 thick slices bacon cut in 1/2" wide strips
3 eggs
1/2 cup whipping cream
1 teaspoon salt
Cook onions in butter over medium heat until soft.
Cook bacon and drain
Beat eggs, cream, and salt.
Spread onions in pastry shell. Sprinkle with bacon.
Pour in egg mixture. Bake on lowest oven rack at 450
for 15 minutes. Reduce heat to 350 and continue baking
until top browns, about 15 minutes.
Taco Dip
6 oz. cream cheese, softened
12 oz. sour cream
1/2 tsp. garlic powder
2 cups salsa, drained
2 cups lettuce, chopped
1 large tomato, chopped
1 large onion, chopped
1 large green pepper, chopped
1 8-oz. package shredded mozzarella cheese or mixed taco cheese
1 large can black olives, chopped or sliced
Jalapeno peppers, chopped (optional)
With a mixer, cream together the cream cheese, sour cream, and garlic powder.
Spread evenly onto a 12-14" round platter. Spoon the well-drained salse over
this. Top with the lettuce, tomato, onion, green pepper, mozzarella cheese,
add chopped jalapeno peppers. Chill for two hours.
Serve with your favorite taco chips.
Mom Scott's Vegetable Pizza
2 8-ounce Quick Pillsbury Crescent Rolls
Do not separate but spread out on cookie sheet.
Cook 10 minutes at 350 degrees. Let cool completely.
Mix:
8 ounces cream cheese and 2/3 cup mayonaise
1 tsp. minced onion
1 tsp. dill week
Spread on cooled rolls.
Top with:
Chopped tomatoes
Alfalpha sprouts
Mozzarella cheese
Chopped cucumbers
Chopped green peppers
Olives
Celery
Broccoli
Cauliflower
You can be as creative as you want any way you like!
Debbie's Jordan Marsh Blueberry Muffins
1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 cup milk
2 cups flour
2 tsp. baking powder
pinch of salt
1 to 2 cups blueberries (however you like them)
Cream butter, sugar, and eggs well. Add milk, flour, baking powder, and salt.
Stir until almost combined. All blueberries and stir until just moist.
Bake in greased muffin cups at 375 degrees.
Bake small muffins 25 minutes; bake large muffins 30-35 minutes.
Sprinkle with cinnamon and sugar before baking, if desired.
You can use this recipe to make most any kind of muffin.
Apple spice is really good!
