There are other recipes that call for glitter. This ingredient can harm
birds or wildlife if eaten, and we certainly DON'T want to harm Santa's
reindeer, so I prefer to be kind to animals and substitute colored sugar
crystals for the glitter.
Shortbread Cookies
Cream together:
4 tablespoons icing sugar
1/2 cup butter
1/2 cup shortening
1 teaspoon vanilla
Sift together:
1-1/2 cups flour
1 tablespoon cornstarch
1/4 teaspoon salt
Add to the creamed mixture and mix well. Chill for an hour or so.
Roll teaspoonfuls of dough and set on ungreased cookie sheet.
Flatten a little with your fingertips.
Bake at 350 degrees for 15 minutes.
When completely cool, frost with your favorite frosting.
(My crew likes cherry or strawberry the best.)
Needhams
You will need:
3/4 cups cold mashed potatoes
1 pound coconut (about 4 cups)
1 pound confectioner's sugar (about 4-3/4 cups sifted)
1-1/2 teaspoon vanilla
1/2 teaspoon salt
Combine ingredients. Roll in balls and put on wax paper.
Refrigerate 1/2 to 1 hour. Dip balls in coating then place on refrigeration.
To make Almond Joys, substitute almond extract for vanilla.
Chocolate Coating
Put 1 12-ounce package chocolate chips, 4 squares of bakers chocolate,
and 1/2 cake of wax in top of double boiler. Melt and then dip needhams
in mixture and set on wax paper. Refrigerate.
Pumpkin Bread
Mix thoroughly in large bowl:
3-1/2 cups flour
2 teaspoons baking soda
1 cup sugar
1-1/2 teaspoon salt
1-1/2 teaspoon cinnamon
1 teaspoon nutmeg
Make a well in the center of the dry ingredients and add all at once:
1 cup oil
4 eggs
2/3 cup water
2 cups canned pumpkin
Mix well. Pour batter in four 8x4-inch loaf pans filling each half full.
Bake at 350 for 1 hour
Reece Cups
Melt in double boiler:
1 12-ounce package chocolate chips or hersey kisses
2 tablespoons salad oil
Filling
Mix together:
1/4 cup confectioner's sugar
1/4 cup brown sugar
1/2 cup peanut butter
2 tablespoons soft margarine
Refrigerate
Put drop of chocolate mixture into bottom of mini-cupcake wrappers -
then a bit of filling - then more chocolate.
Wah-laa!
My Mom's Banana Bread
Mix together:
1-1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup melted butter
3/4 cup sugar
1 egg beaten
3 bananas mashed fine
1 cup of nuts (if desired)
Bake at 350 for 1 hour
Cherry Balls
Drain a bottle of marachino cherries and dump on paper towel to dry.
Mix together:
1-1/2 cups confectioner's sugar
1-1/2 cups coconut
1 stick of softened butter
1 tablespoon milk
1 teaspoon vanilla
Wrap mixture around cherry and roll in graham cracker crumbs.
Haystacks
Melt 12-ounce package butterscotch bits over hot water. Cool.
Mix in 1 to 2 cups chow mein noodles gently.
Drop by teaspoonfuls on waxed paper.
Microwave 2-Minute Fudge
Stir together in 1-1/2 quart microwaveable dish:
1 1-pound box of confectioner's sugar
1/2 cup cocoa
1/4 teaspoon salt
1/4 cup milk
1 tablespoon vanilla
Top with 1/2 cup butter. Microwave at high 2 minutes. Stir smooth.
Blend in 1 cup nuts. Pour into wax paper-lined 8-inch square dish. Chill.
Smooth and creamy!
Chocolates
Cream together:
1/3 can condensed milk
1 stick softened margarine
1 pound to 1-1/4 pounds confectioner's sugar
Add flavoring to suit your taste (I usually add 1-1/2 teaspoons).
Some great ideas are maple, strawberry, cherry, orange, coconut, and lemon.
Roll into balls. You can freeze the chocolates until ready to coat with
chocolate, and they coat much easier when they're frozen.

boiler. Melt and then dip chocolates in mixture and set on wax paper.
Refrigerate or freeze.
Jane's Peanut Butter Balls
1 cup graham cracker crumbs
2 cups confectionary sugar
1/2 teaspoon vanilla
1/2 teaspoon salt
1 cup peanut butter
1 stick of margarine
Mix all ingredients together. Roll in balls and refrigerate.
(I roll mine in crushed graham crackers or confectionary sugar.)
