Nectarine Blueberry Crisp

Crisps are the perfect way to take advantage of fresh fruit in season. They can be put together early in the day to be cooked later and makes a great dessert, still warm from the oven. The perfect dish to bring for a friend.

Preheat oven to 400 degrees

Topping
3/4 cup all-purpose flour
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1/4 tsp salt
1/4 tsp ground cinnamon
1/8 tsp ground ginger
6 Tbl cold unsalted butter

Fruit Filling
1.5 lbs firm, ripe nectarines
1 pint blueberries
1/4 cup sugar
3 Tbl flour

To prepare the filling, mix the flour, sugars salt and spices together in a medium mixing bowl. Cut in the butter until the mixture resembles coarse meal.

To prepare the fruit filling: Pit the necatrines and cut into 1/2 inch slices. Toss the nectarines in a bowl with the blueberries, sugar, and flour. Pour the fruit into a 9 or 10 inch sqare baking dish or pie plate. Sprinkle the topping evenly over the fruit.

Bake in preheated oven for about 25-30 minutes, or until the top is browned and the juices are bubbling up around the edge. Remove from oven and cool for 15 minutes before serving. This goes well ala mode.
