Recipe Corner- Fruit Pizza



FRUIT PIZZA 3 VERSIONS



1/2 C margarine
1 C sugar
2 eggs
2 T milk
1 t vanilla
2-1/2 C flour
1/2 t salt
1/2 t soda

Topping:

8 oz. cream cheese, softened
8 oz. cool whip
1/2 cup sugar
1 teas. vanilla
20oz can crushed pineapple, drained
3 bananas, slice
1 pint sliced fresh strawberries
1/2 cup coconut
1 cup chopped nuts
1/2 cup chocolate chips

Crust: Sift together flour, soda, and salt. Cream margarine and sugar, add eggs, milk and vanilla. Add dry ingredients. Pat into greased 14" pizza pan. Bake at 400 degrees for 8 minutes or until golden brown. Cool.


Topping: Beat together cream cheese and sugar, then beat in Cool Whip and vanilla. Spread over cooled crust. Place drained crushed pineapple over Cool Whip mixture. Place banana slices (which have been dipped in the drained pineapple juice or in orange juice to retard discoloration) over pineapple. Slice strawberries over pineapple/bananas. Sprinkle with coconut, chopped nuts and chocolate chips. Refrigerate. Slice into 12-16 wedges to serve.

Fruit pizza version 2

1 refrigerated sugar cookie dough
1 8 oz package of cream cheese
1 c. powdered sugar
fresh fruit of your choice

Roll sugar cookie dough out on a 15 inch pizza pan. Bake for 10 min. at 375 or until lightly brown. Let cool. Mix cream cheese and sugar together and spread on cooled dough. Slice fruit Strawberries, bananas, kiwi, apples) and arrange on pizza. Enjoy!!

Fruit Pizza Dessert Version 3 -

8 servings

1 20-ounce package of sugar cookie dough (like Pillsbury’s)
1 8-ounce package of light cream cheese
1/3 cup sugar
3 tablespoons of brandy or peach schnapps
1/2 teaspoon of vanilla
4 cups thinly slice fruit (bananas, strawberries, kiwi fruit)
1/2 cup apricot preserves

Preheat oven to 375F. Cut cookie dough into thin rounds. arrange on 14 inch pizza pan, covering pan completely. Press rounds together to seal. Bake until puffed and golden-brown (about ten minutes). Cool completely. Can be prepared ahead.


Combine cream cheese, sugar, vanilla, and one tablespoon of brandy. Spread evenly over cookie crust. Arrange fruit in circular pattern beginning with strawberries along outside edge.


Melt apricot preserves and two tablespoons brandy over low heat. Brush over the fruit.
