Vegetarian Baked Beans

454 g bag of Thompson's white pea beans
1 medium onion, finely chopped
½ tablespoon sea salt
2 teaspoons cider vinegar
1 ½ teaspoons mustard
2 tablespoons brown sugar
½ cup blackstrap molasses
1 cup tomato ketchup


Soak beans overnight in cold water; discard soaking water the next morning. Mix seasonings together and turn into a 6 cup casserole dish. Add beans and enough hot water to cover. Cover casserole and bake in a 250ºF oven for 7 hours. Add liquid several times to keep beans just covered.
