Tofu Banana Bread

7.5 ounces soft silken tofu (use 3/4 of a 10 ounce package)
1/4 cup vegetable oil
3/4 cup sugar
1 cup mashed ripe bananas (2 bananas)
1 teaspoon vanilla extract
2 cups unbleached flour
½ teaspoon baking soda
2 teaspoons baking powder
1/4 cup chopped pecans
rind from 1 orange


Preheat the oven to 350ºF. Oil a 5 x 9 inch loaf pan. Using an electric mixer, mash the silken tofu. Add the oil and combine, then slowly add the sugar until well blended. Add the mashed banana and vanilla extract. In another bowl, combine the flour, baking soda and baking powder. Add the chopped pecans and orange rind, mixing well. Add the dry ingredients to the wet ingredients and stir until combined. Pour into the prepared baking pan. Bake for about 1 hour or until a toothpick inserted in the center comes out clean.
