Sweet and Sour Lentil Casserole

1 cup dry lentils
1/4 cup soy sauce
3 tablespoons honey
1/4 cup white vinegar
1 teaspoon grated fresh ginger
2 ounces fine egg noodles
1 tablespoon dark sesame oil
2 tablespoons water
1 clove garlic, minced
1 large carrot, thinly sliced
1 small green pepper, chopped
4 green onions, thinly sliced


Wash lentils in several bowls of water until clean. Place lentils in a pot, cover with water and cook in covered pot until tender, but still firm. Mix soy sauce, honey, vinegar and ginger together; set aside. Cook noodles according to package directions; drain. Heat sesame oil and water; sauté garlic and carrot for 3 to 5 minutes. Add pepper and green onions, cooking about 2 minutes. Add cooked lentils and soy sauce mixture; cook for 10 minutes over low heat. Add noodles and mix together until heated through.
