Tofu Mayonnaise


Tofu Mayonnaise

3/4 lb firm or extra firm tofu
1/4 cup oil
2 tablespoons lemon juice
3 tablespoons cider vinegar
1 ½ tablespoons sugar
½ teaspoon salt
water as needed for blending


Put all ingredients into a blender, liquid first, and blend until smooth. Refrigerate. The lemon juice, sugar and cider vinegar can be adjusted to taste. For a sour mayonnaise add more lemon juice and less vinegar.

Preparation time: 5 to 10 minutes.
