Tofu Goulash


Tofu Goulash (My Own Accidental Creation)

1 pound firm tofu, frozen
2 celery stalks, finely chopped
2 carrots, finely chopped
2 tablespoons olive oil
1 cup rolled oats
1 tablespoon tamari or soy sauce
˝ cup wheatgerm
1 tablespoon minced onion
1 teaspoon Mrs. Dash
1 teaspoon sea salt


Thaw tofu. When thawed, squeeze out excess water and crumble into small pea size pieces. Sauté celery and carrots in olive oil for 5 minutes. To the crumbled tofu add rolled oats, tamari, wheatgerm, minced onion, Mrs. Dash and sea salt. Mix well. Add to vegetable mixture and simmer for ˝ hour, stirring occassionally. Serve on top of rice.
