Tofu Brownies


Tofu Brownies

1 ½ cups unbleached flour
1 tablespoon baking powder
12 ounces soft silken tofu
2 cups sugar
1 teaspoon vanilla
1/2 cup Parkay margarine, melted
3 ounces unsweetened chocolate (Baker's squares)
1 cup chopped pecans


Mix flour, baking powder and cocoa together in a small bowl. In a medium mixing bowl, beat tofu on high speed until liquified. Add sugar and vanilla and beat on high speed. Melt margarine and chocolate together on low heat. Add to tofu mixture and beat well. Gradually add flour mixture to tofu mixture, beating well after each addition. Fold in chopped pecans. Pour into a lightly greased 13 x 9 inch pan. Bake at 350ºF for 25 to 30 minutes, watching carefully as some ovens are hotter than others. When toothpick inserted in center comes out clean, the brownies are done.
