Tofu Waffles


Tofu Waffles

½ pound soft silken tofu
1 ½ cups skim milk
2 tablespoons vegetable oil
2 teaspoons vanilla
1/4 teaspoon almond extract
1 teaspoon lemon or orange rind, grated
2 ½ cups whole wheat flour
½ teaspoon sea salt
½ teaspoon cinnamon
½ teaspoon nutmeg
4 teaspoons baking powder
2 egg whites, whipped


Blend tofu, milk, vegetable oil, vanilla, almond extract, and lemon or orange rind until smooth. Set aside. In a large bowl, mix flour, salt, cinnamon, nutmeg and baking powder. Mix wet ingredients with dry ingredients, fold in egg whites and cook in a well-oiled waffle iron.
