MOM'S NOODLE CASSEROLE


1 pkg. (12-14 oz.) Shell noodles, cooked & drained.
1 can (16 oz.) Whole peeled tomatoes or stewed tomatoes, (Italian stewed tomatoes are good).
1 can (15 oz.) Tomato sauce
1 medium onion (chopped)
3 tbsp. Flour
½ cup liquid Butter Buds
½ tsp. Each Basil, oregano, garlic powder (or 1 ½ tsp Italian Seasoning) salt & pepper to taste
2 cups shredded mozzarella cheese (fat-free or low fat)
Add about a 1 tbsp of sugar if you like.
In a sauce pan, saute onions in liquid Butter Buds. Add peeled tomatoes & juice from that can. Break apart tomatoes with a spoon. Add 3/4 of the can of tomato sauce. Pour the rest of the sauce in a bowl and mix in the flour, blending thoroughly and then mixing it in with the other tomato mixture. Stir in spices and simmer until heated. In a large casserole dish (sprayed w/nonfat cooking spray), spoon a little sauce, then layer noodles, sauce, and cheese. Repeat layers. Bake at 350 degrees for 30 min.

KATHLEEN'S ORANGE CRESCENT COOKIES


3 eggs 3 cups flour (heaping)
½ cup orange juice 3 tsp baking powder
1 tsp orange extract 3 tbs. orange rind
1 ½ sticks butter/margarine
½ cup of sugar

Cream margarine (room temperature) with sugar. Add other ingredients on left & mix.
Add ingredients on right & knead until dough isn't sticky. (Takes about 5 minutes, adding sprinkles of flour as you go).
Let dough stand for 10 minutes. Then take tablespoons of dough, and roll each one into a ball about the size of a jawbreaker. Then roll between hands into small logs.
Bend into crescents & place on ungreased cookie sheets. Makes 24-30 cookies.

Bake 15 minutes until golden on bottom.

FROSTING 2 cups confectioners sugar...3 tablespoons orange juice...1 teaspoon orange extract should be thick & pasty...Drip over cookies.

PUMPKIN ROLL


3 eggs
1 cup sugar
2/3 cups pumpkin or pumpkin pie mix
1 tsp lemon juice

Beat eggs 5 min. gradually add sugar and then pumpkin and lemon juice.

Sift together 3/4 plain flour, 1 tsp. ginger, 1 tsp baking powder, ½ tsp salt, ½ tsp nutmeg, 2 tsp cinnamon. Add to pumpkin mixture. Grease and flour jelly roll pan, sprinkle cake with chopped pecans (about ½ cup) and pat in gently, bake at 350 degrees only 15 minutes. Sprinkle tea towel with powdered sugar when cake is done turn out on towel and roll cake up in towel and allow to cool.

FILLING
1 cup powdered sugar
2 oz. pkgs cream cheese
4 tablespoons margarine
½ tablespoons vanilla and beat till smooth
½ cup nuts

Unroll cake and spread with filling, re-roll and cool 1 hour and cut.

DATE PUDDING


1/3 cup butter (creamed)
1 cup sugar
1 cup pecans
1 cup milk
3 tbsp flour sifted with ½ tsp baking powder.
1 cup dates
3 eggs

Mix all ingredients together and bake in a 8" square pan at 300 degrees for 1 hour or until firm.

SUE'S APPLESAUCE CAKE


1 box yellow cake mix
1 can applesauce
3 eggs

FILLING
1/4 cup sugar
2 tsp cinnamon

Mix all together Pour half of the batter in a bundt pan, sprinkle with sugar mixture, and with a knife, swirl the sugar mixture into the batter, then pour the remaining batter on top. Bake at 350 degrees for 30 to 40 minutes.

PEANUT BUTTER ROLL


2 cups granulated sugar
½ cup white corn syrup
½ cup water
1/8 tsp salt
2 eggs whites
1 tsp vanilla
½ cups nuts, chopped (optional)

Mix sugar, water, syrup and salt. Cook over low heat, stirring constantly, until sugar is dissolved and mixture boils. Cook until hard ball stage (about 262 degrees). Remove from heat and pour over stiffly beaten eggs whites. Add vanilla and continue beating until mixture can be handled as dough. Divide into 3 balls and roll on greased board with greased rolling pin until about 1/4 inch thick. Roll with peanut butter which has been thinned to spreading consistency by adding melted butter. Blend in nuts, if desired. Roll as jelly roll and put on waxed paper. Let stand for short time..then slice to desired thickness.

PEANUT BUTTER BALLS


1 cup peanut butter 1 tsp vanilla
2 cups powdered sugar 1 stick margarine
1 8 oz. package chocolate chips 1 tbsp paraffin (melted)

Work together the peanut butter, powdered sugar, margarine and vanilla and make into balls (use one teaspoon of mixture for each ball). Chill in freezer while melting chocolate chips and paraffin over low heat or in double boiler. Put each ball on toothpick and swirl in the chocolate. Place on waxed paper and put in refrigerator to chill. These can be made ahead of time and put in freezer for future use. May substitute butterscotch chips for chocolate chips.

BETTY'S PEANUT BUTTER FUDGE


3 cups sugar 3/4 evaporated milk
pinch of salt 1 tsp vanilla
3/4 cup water 1 ½ cup peanut butter

Boil sugar, water, evaporated milk, salt...to soft ball stage ( to about 234 degrees) Stir in peanut butter, margarine and marshmallow cream. Pour in buttered 8" square pan. Cut when cool.

TOFFEE


1 cup sugar
2 stick butter or margarine
3 Hershey bars
ground pecans

Bring sugar and butter to a boil. Stir constantly until mixture turns caramel colored about 6-8 minutes. Pour mixture onto cookie sheet. Lay Hershey bars on top. Let melt and spread. Sprinkle with nuts and let cool before cutting.

CHICKEN CASSEROLE


2 cups cooked chicken (diced) 2 tsp pimento
1 can french style green beans 1 med onion (chopped)
1 can celery soup ½ cup mayonnaise
1 box Uncle Ben's Longrain Wild Rice 1 can water chestnuts

Mix all ingredients together. Bake for 350 degrees for 1 hour in a 9 X 13 pan.

DIANE'S GOULASH


1 cup small shell macaroni ½ cup ketchup
2 cups sliced celery 1/4 tsp sugar
1/4 tsp pepper 1 tsp garlic salt
1 tbs. Worcestershire sauce 1 lb ground beef
1 med onion (chopped) 1 2 oz can of mushrooms (undrained)
1 28 oz whole peeled tomatoes

In a skillet brown meat and onions, drain fat, add rest of ingredients and macaroni. Serve with some shredded sharp chedder cheese.... hmmmmmm. Simmer 20-25 minutes.

HO'S COBBLER


1 cup sugar
1 cup self-rising flour
1 cup milk
1qt. fruit with juices or 1 large can sliced peaches
1 stick butter of margarine

Preheat oven to 350 degrees. Melt butter in 13 X 9-inch baking pan. Mix sugar, flour and mile together; pour over melted butter. Pour peaches (or any other kind of fruit, cherries, strawberries. Blackberries, etc.) Evenly over batter. Do not stir. Bake for 45 minutes until brown and baked through. If you use canned fruit, in heavy syrup., decrease sugar to 3/4 cup.

BROCCOLI-CAULIFLOWER SALAD


1 large head cauliflower
1 bunch green onions, chopped
½ c mayonnaise
½ c plain yogurt
2 tbsp sugar
2 tbsp vinegar
1 (6oz.) pkg. buttermilk dressing mix
1 bunch broccoli

Wash cauliflower and broccoli. Chop into small pieces. Mix with onions. Combine last 5 ingredients. Toss lightly with vegetables. Chill overnight.

KATHY'S MOM'S CHOCOLATE FUDGE


1 cup milk
3 cups sugar
1/3 cup white karo syrup
1 tsp vanilla
1 8 oz. jar of marshmallow cream
1 13 oz. bag chocolate chips (semi-sweet)

Put sugar, milk, and syrup in a heavy saucepan. Let it come to a boil. Boil until it forms a ball in a glass of cold water. Remove from heat. Add chocolate chips, marshmallow cream, and vanilla and stir. Pour into a greased or buttered 9 x 13 pan and cool.

Note: You can substitute 1 16 oz. jar of peanut butter instead of the chocolate.

MELISSA'S EASY PEANUT BUTTER COOKIES

1 cup of peanut butter
1 cup of sugar
1 egg
1 tsp of vanilla
Preheat oven to 350 degrees. Mix all ingredients together roll into balls about an inch in diameter. Place balls on an ungreased cookie sheet and bake for 8 to 10 min. Perfect for cookie drives and kids lucnh boxes.
