Pineapple Cake

Here's a favorite recipe, served at Nitefire's Coffee House!!!
(this is a man's recipe, and men love it!)

2 eggs
20 oz. can crushed pineapple, undrained
2 cups all purpose flour
1 cup sugar
1 cup brown sugar
2 tsp. baking soda
1 cup chopped walnuts

~ Beat eggs until light and fluffy.
~ Add all ingredients except nuts.
~ Mix well by hand.
~ Gently stir in nuts.
~ Spread evenly into 13 x 9 x 2 ungreased pan.
~ Bake at 350 degrees for 45 or 50 minutes.
~ Test with toothpick.
~ Spread with cream cheese ginger frosting when cool.

Cream Cheese Ginger Frosting

3 oz. cream cheese, softened
1/4 cup buttormarge
1 teaspoon vanilla
2 cups confectioners sugar
1/2 teaspoon ground ginger

~ Beat together first three ingredients.
~ Gradually add the rest until frosting has a nice, smooth consistency.
~ Spread over pineapple cake.
~ Garnish with additional nuts, cocconut, etc. if desired.
~ Recipe may be doubled if you love LOTS of frosting!
~ The cake is even better after its been in the fridge for a day or two, and freezes exceptionally well (it even tastes great frozen!)
