CHANTILLY POTATOES 3 cups instant mashed potatoes 1/2 cup heavy cream salt and freshly ground pepper 1/2 cup grated Swiss cheese Preheat oven to 350°. Butter a shallow 1½ qt. baking dish. Spread the mashed potatoes in the dish. Whip the cream until stiff, fold in the cheese and add salt and pepper to taste. Spread over the potatoes. Bake 25-30 minutes or until the top is delicately brown.
