COLD CHICKEN WITH HOT SAUCE

2 whole chicken breasts	
4 cups water
1 tsp hot chili oil	
1 tbs sugar
1 tsp finely chopped ginger root	
2 tbs soy sauce
1 tsp finely chopped garlic	
1 tsp sesame oil
1 tbs chopped green onion, with tops	
2 tbs white vinegar

Heat water to boiling and add chicken.  Bring to boil.  Reduce heat 
to medium.  Cover and simmer 10 minutes.  Remove from heat and let 
stand, covered, 15 minutes.  Remove from broth and let cool slightly.
Remove bones and skin from chicken.  Cover and refrigerate until cold.
Cut each chicken piece crosswise into ½ inch pieces.  Place on serving
platter.  Mix remaining ingredients (except onion) until blended.  
Pour over chicken and sprinkle with onion.  Also good over pasta for 
a cold, spicy pasta salad.
