FANCY SLICED BAKED POTATOES

4 medium evenly shaped potatoes	
2 tbs olive oil
3 tbs melted butter	
1 tsp salt
3 tbs parsley	
1/2 cup Parmesan cheese
1 cup grated Cheddar cheese

Wash potatoes, slather with olive oil.  Using a wooden spoon placed 
alongside the potato, cut thin slices through, but not all the way 
down to the bottom (this is where the spoon helps).  Put potatoes in 
baking dish and fan them out as much as you can.  Drizzle with the 
butter, sprinkle with the seasonings.  Bake at 425° for about 50 
minutes.  Remove from oven, sprinkle on the cheeses.  Bake 10-15 
minutes until lightly browned.  Check with fork to make sure potatoes 
are tender inside.  Serve with sour cream and/or bacon bits.
