HONEY SPINACH SALAD

¼ tsp salt	
¾ pound fresh spinach
1 clove garlic; crushed	
1/3 cup honey
1 (11oz) can mandarin oranges, drained	
1/3 cup olive oil
¾ c coarsely chopped walnuts, chopped	
1 tbs lemon juice	

Sprinkle salt in large bowl; add garlic.  Mash garlic to a paste, using
the back of a spoon.  Combine honey, olive oil, and lemon juice in a 
jar.  Cover tightly, and shake vigorously.  Add honey mixture to garlic
mixture; stir will.  Cover and chill at least 2 hours.  Remover stems 
from spinach; wash leaves thoroughly, and pat dry.  Tear leaves into 
bite-size pieces.  Combine spinach, oranges, and walnuts in a large 
bowl; toss well.  Pour honey mixture over salad, tossing to coat.  
Serve immediately.  (Brenda says:  I only use 1/2 the dressing)
