S.O.S. (Super Omnipotent Spuds)
Don’t be afraid of the amount of garlic in thie dish...
it is very mild after cooking.
8 baking potatoes, peeled and quartered
1 large onion, peeled and sliced
1 tsp salt
1/2 c cream or condensed milk
4 tbs sweet butter
6 cloves fresh garlic, peeled
1/2 c grated Cheddar
1/2 c buttered bread crumbs
Boil potatoes, onion and garlic in salted water for 15 minutes, or
until soft. Drain well. Mash potatoes, onion and garlic until smooth.
Add cream and butter and beat well. Place in buttered casserole,
sprinkle with mixture of cheese and buttered bread crumbs and bake at
350° for 25-30 minutes, until bubbly. Makes 4-6 servings (or 2 if
you are eating with my husband).
