SAUSAGE GUMBO WITH CAJUN DUMPLINGS
1 pkg (12oz) Little Smokies pork sausage; cut into 1 inch pieces
½ c chopped red bell
½ c chopped onion
2 cans (14½ oz each) stewed tomatoes
1 pkg (10oz) frozen cut okra
2 cans (14½ oz each) chicken broth
1 cup Bisquick baking mix
1/3 cup milk
¼ tsp Cajun seasoning
Cook sausage in Dutch oven over medium-high heat 5 minutes, stirring
occasionally. Stir in tomatoes, chicken broth, and okra. Heat to
boiling, stirring occasionally. Stir together baking mix, milk, and
seasoning. Drop dough by spoonfuls onto boiling gumbo. Cook uncovered
over low heat 10 minutes. Cover and cook 10 minutes longer.
