TWICE BAKED POTATOES

4 baking potatoes	
2 tbs butter
3 green onions, thinly sliced	
1/2 cup hot milk
1/2 tsp salt	
dash black pepper
dash nutmeg	
dash paprika
4 slices bacon	
2 tbs grated Parmesan
2 tbs grated sharp Cheddar cheese

Wash potatoes, pat dry.  Prick each potato with a fork.  Bake potatoes
on rack at 400° for 1 hour.  Cut a thin slice from top of each potato.
Scoop out pulp into a bowl.  Mash the potato with hot milk.  Beat in 
the butter and green onion, add seasonings.  Fry bacon until crisp; 
crumble.  Add to potato mixture; spoon into shells.  Sprinkle cheeses 
on potatoes.  Place on baking sheets.  Bake at 375° until piping hot 
and cheese is melted (about 15 minutes).
