ZESTY ITALIAN WONTONS

6 oz bulk sweet Italian sausage	
40 wonton wrappers
2 tbs snipped cilantro OR parsley	
1/4 cup finely chopped onion
4 oz Mozzarella cheese, shredded	
oil for deep frying
2 tbs grated Parmesan cheese	
spaghetti sauce (optional)

For filling, in a large skillet cook the sausage and onion over 
medium heat until sausage is brown and onion is tender, stirring 
to break meat into small pieces.  Drain well; cool completely.  Stir 
in the mozzarella cheese, Parmesan cheese, and cilantro or parsley.  
Place one rounded teaspoon of the filling in the center of a wonton 
wrapper.  Moisten the edges of the wrapper with water.  Starting with 
one corner, fold the wrapper over the filling, forming a triangle; 
press to seal well.  Bring the two other pointed ends of the wonton 
wrapper up over the stuffed center.  Moisten and press together.  
Cover and chill if not frying right away.  Fry wontons, a few at a 
time, in deep hot oil (365°) for 1½ to 2½ minutes or until golden 
brown.  Drain on paper towels.  Serve warm with spaghetti sauce for 
dipping.  Makes 40 wontons.
