This is my kitchen, where it seems like I spend more time than I want to! I have some recipes for you here, hope you like them!
Cheeseburger Pie
1 lb ground beef 1/2 cup Bisquick baking mix
1 pack of taco seasoning 1 cup milk
1 cup chopped onion 2 eggs
1/2 tsp salt
2 cups taco cheese
HEAT oven to 400 grease 9" pie plate.Cook ground beef and drain then add salt
onions. Add taco seasoning following direction.Spread in pie plate,sprinkle
with cheese.
STIR remaining ingredients with fork until blended.Pour into pie plate.
BAKE 25 min or fork test.
Chicken or Turkey Enchilada
1 can (10 3/4 ounces) condensed cream of chicken soup
1/2 cup sour cream
1 tablespoon butter
about 1/2 cup chopped onions
1 tsp chili powder
2 cups chopped cooked chicken or turkey
8 flour tortillas
1-2 cups shredded Cheddar or Monterey Jack cheese
STIR in a small bowl soup and sour cream
HEAT in a med saucepan over heat,heat butter add onion and chili powder.cook
until tender.Add chicken and 2TBLS soup mixture.
SPREAD 1/2 cup soup mix in 2 quart shallow baking dish.Along one side of each
tortilla,spread about 1/4 cup chicken mix.Roll up each tortilla around filling
and place seam-side down in baking dish. Spread remaining mixture over
enchiladas.Sprinkle cheese over mixture.
BAKE at 350 for 25 minutes
Fiesta Chili Corn Bread
Crust
2 packages (8.5 ounces)corn muffin mix
2 eggs lightly beaten
2/3 cup milk
1 can (11 ounces) Mexican corn ( a blend of redand green peppers)
Filling
1can(15 ounces) no bean chili
1 cup shredded cheddar cheese
1 cup shredded Monterey jack cheese
1cup chopped green onions
1 can (2.25 ounces) chopped black olives
sour cream
Preheat oven to 350.Spray a flan pan with oil.Combine corn muffin
mix,eggs,milk and corn in bowl.
BAKE 20 min.Let cool and turn tart out onto a serving tray.
In saucepan heat chili over med heat.spread eveenly in well of tart.layer
cheese,green onions and olives over chili.Garnish with sour cream.
you can take away any of veggies you do not like.
