Orange Frost
2 oranges with thick peels
Sugar
1/2 cup vanilla yogurt
3/4 cup orange juice
2 mint leaves
-----------
1. Carefully cut off the top of each orange. Slip a paring knife between the flesh and the peel. Then have your child slide a spoon into the slit you made to scoop out the flesh. Strain the pulp into a bowl.
2. Dip the rim of the oranges in sugar and place them in the freezer while you prepare the frost. Measure the juice saved from the pulp--you need at least 3/4 cup. (If there is extra juice, add it, too.) Combine vanilla yogurt and orange juice with 3 ice cubes in a food processor or blender. Process until the ice is crushed smooth.
3. Remove oranges from the freezer and fill them with the frost. Each orange will hold about 1 cup of frost. Place on a dessert plate and garnish with a mint leaf. Enjoy!
