Green Pepper Casserole

4 green peppers
2 cans of mushroom soup
2 cans of stewed tomatoes (drained)
2 cups of white rice
1½ pounds ground beef
seasoning salt to taste (opt).
½ chopped onions

Chop green peppers into four sections, line the bottom of a cake pan with them. Cook the rice according to the box. Brown hamburger, onion and any left over green pepper. After the hamburger is brown add soup, tomatoes, seasoning salt and rice. Pour mixture over green peppers and cook at 350 for 1 hour. Cover with cheese if desired and heat till it's melted. This makes alot, I can feed all of my family (fam. of 5) twice with this recipe.

Chicken-Rice Casserole

1 cup uncooked rice
1 can cream of celery soup
1 can cream of chicken soup
1 cup water
6 chicken breasts
1/2 stick melted butter

Put rice in the bottom of a 2-quart casserole dish. Mix soup with water and pour over rice. Dip chicken breasts in melted butter, then lay on top of rice. Bake at 350 degrees for 1 hour or until chicken is done.
**Note: you may want to stir the rice half way thru cooking stir and sprinkle with paprika. Bake at 325 degrees for 25 minutes.

Classic Green Bean Casserole

1 can cream of mushroom soup
1/2 cup milk
1 tsp. soy sauce
dash pepper
2 cans green beans, drained.
1 can Durkee French Fried Onions

Stir in first 5 ingredients and add 1/2 of onions. Bake 350 degrees for 25 minutes. Add rest of onions and bake 5 more minutes.

Corn Casserole

1 can whole kernel corn
1 can cream style corn
1 pkg. corn muffin mix (Jiffy)
1/2 pint sour cream
8 oz. cheddar cheese, grated
1 stick margarine
1/2 cup green pepper (optional)
1/2 cup onion

Saute' onion and pepper with margarine. Mix everything together and put in 9X13 pan. Bake 1/2 hour at 400 degrees.

Quick And Easy Casserole

1 onion, chopped
2 tablespoons shortening
1 pound ground beef
1 16-ounce can cream-style corn
3 cups seasoned mashed potatoes
----------
Cook onion in shortening in skillet until tender. Add ground beef. Cook until lightly browned, stirring frequently; drain. Place in greased casserole dish. Spread corn over beef mixture. Top with mashed potatoes. Bake at 350 degrees for 25 minutes.
