Lazy Lasagna

1 pound ground beef
1 jar (32 oz) spaghetti sauce
1 pound cottage cheese
8 ounces dairy sour cream
8 uncooked lasagna noodles

3 packages (6 oz each) sliced mozzarella cheese (12 slices)
1/2 cup grated Parmesan cheese
1 cup water
Cook beef in large skillet over medium-high heat until meat is brown, stirring to separate meat; drain fat. Add spaghetti sauce. Reduce heat to low. Heat through, stirring occasionally; set aside. Combine cottage cheese and sour cream in medium bowl; blend well.
Spoon 1 1/2 cups of the meat sauce in bottom of 13x9-inch pan. Place 1/2 of the uncooked noodles over sauce, then 1/2 of the cottage cheese mixture, 4 slices of the mozzarella, 1/2 of the meat sauce and 1/4 cup of the Parmesan cheese. Repeat layers starting with the noodles. Top with remaining 4 sliices of mozzarella cheese. Pour water around the sides of the pan. Cover tightly with foil. Bake in preheated 350 degree oven for one hour. Then uncover; bake 20 minutes more or until bubbly. Let stand 15 to 20 mins more. Garnish as desired. Makes 8-10 servings. (More like 6 big helpings)

Fusilli con Spinaci e Ricotta

(From Antonello's Ristorante, Newport Beach, California)

1 pound dried fusilli (corkscrew shaped pasta)
2 cups ricotta cheese
Salt and pepper to taste
1-1/2 cups extra-virgin olive oil
1/2 cup freshly grated
2 tablespoons minced garlic
Parmesan cheese
6 cups chopped fresh spinach

1. Cook the pasta in rapidly boiling water with 1 tablespoon salt for 8 to 10 minutes until almost tender - it should be al dente. Meanwhile, make the sauce.

2. Heat olive oil in a large skillet. Add the garlic and saute until it just starts to turn golden. Add the spinach, saute a minute or two, then add the ricotta cheese and seasonings to taste. Set aside.

3. When the pasta is done, drain off the water and toss the fusilli with the sauce. Serve in a bowl-topped with Parmesan.

**Note: Makes 6 or more servings

Lazy Day Lasagna

1 lb. ground beef

1/4 tsp. oregano
1 15 1/2 oz can spaghetti sauce
1 cup cream-style cottage cheese
1 6 oz package slice Mozarella cheese

Brown ground beef and drain grease. Cook noodles in boiling salted water following package directions. Drain. Combine oregano with spaghetti sauce. Stir meat into spaghetti sauce. In greased 10X6X1/2 inch baking dish, alternate layers of noodles, cottage cheese, mozarella, and meat sauce....using meat sauce for top layer. Bake in moderate oven (375 degrees) about 30 minutes.
