Caesar Chicken Sandwich
3 tablespoons all-purpose flour
1/2 teaspoon ground black pepper
4 boneless chicken breast halves
Vegetable oil cooking spray
6 tablespoons lemon juice
4 garlic cloves, minced
4 teaspoons Worcestershire sauce
Dash hot pepper sauce
2 tablespoons PLANTERS Gold Measure Walnuts, toasted and chopped
4 teaspoons grated Parmesan cheese
4 Romaine lettuce leaves
4 whole wheat sandwich rolls, sliced lengthwise

Combine flour and pepper. Coat chicken with flour mixture, shaking off excess. Spray a 10-inch skillet with cooking spray for 2 seconds; over medium heat, lightly brown chicken on both sides. Combine lemon juice, garlic, Worcestershire and hot sauce; pour over chicken. Cover; simmer for 15 minutes or until chicken is done. Sprinkle walnuts and cheese over chicken. Arrange lettuce on rolls; top with chicken. Serve immediately.

Ritz Cracker Chicken
Boil 4-6 boneless, skinless chicken breasts - after boiling cut into bite size pieces. Mix 1 can cream of mushroom soup and 1 cup sour cream. Add chicken meat to soup and sour cream mixture. Crumble 1 sleeve Ritz crackers on top and pour 1/2 cup butter over crackers. Bake until brown at 450 degrees approximately 15-20 minutes.

Cooked and deboned chicken
1 pkg crescent dinner rolls
2 cans cream of mushroom soup
grated cheddar cheese
1 soup can of milk

Roll meat at wide end of rolls. Mix soup and milk - pour over
Sprinkle with cheese. Bake 325 degrees for 1 hour.

Oven Baked Spicy Chicken
Spice & Herb Combination:
1 tsp sweet basil
1 tsp dry thyme
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tsp cayenne pepper
1 tsp black pepper
1 tsp salt
4 deboned chicken breasts
Bread Crumb Mixture:
1/2 cup bread crumbs
1/4 cup freshly chopped parsley
1 tbsp olive oil
1 tsp lemon juice
2 eggs-beaten
Combine all ingredients of dry mixture (spice & herb combination). Beat eggs and dip the chicken (both sides) in the egg. Sprinkle dry mixture evenly over chicken to coat, leaving a bit of mixture to combine with bread crumbs. Combine remaining herb mixture with bread crumbs, chopped parsley, ollve oil & lemon juice & dip chicken in this mixture & coat on both sides. Bake about 10-15 minutes, turning once.

Lemon-Garlic Chicken with Blonde BBQ Sauce
1 kg chicken
1/3 cup lemon juice
3 Tbsp dijon mustard
1/4 tsp garlic powder
2 Tbsp light mayonnaise
2 Tbsp barbecue sauce
1 tsp chili powder
1/4 tsp paprika
3/4 cup Italian-seasoned breadcrumbs
1/4 cup parmesan cheese
1. Combine lemon juice, mustard and garlic in large bowl, reserving 2 Tbsps. Set aside. Add chicken to lemon juice mixture in large bowl, turning to coat. Cover and marinate in refrigerator 30 mins.
2. Combine reserved 2 tbsps lemon juice mixture with mayonnaise, barbecue sauce, chili powder, and paprika. Cover and chill.
3. Combine breadcrumbs and cheese. Remove chicken from bowl, discard marinade. Dredge chicken in breadcrumb mixture and place on broiler pan coated with spray. Bake at 400F for 45 mins or until golden brown and cooked through. Serve with sauce.

Chicken A La Paula
4 chicken breasts skinned, boned, pounded kinda flat
Oil
Can of Chicken broth
parsley dried
4 chives (green onions) cut small
Dijon mustard
1 lemon
salt and pepper to taste
In a skillet, brown the chicken in oil about 2-3 min per side on med to med-high heat. Remove chicken from pan. Add parsley (about 4 Tbsp), chives, chicken broth, juice of the lemon, and dijon mustard(about 1tbsp). Heat sauce up until just boiling, add chicken back to pan. Serve Immediately. 4 servings, unless dh likes seconds then, 3 servings. :)
**Note: My dh loves this, I have a tendency to add and subtract ingredients each time I make it. I have also added a little white wine to this and dh loved it.
Lemon Pepper Chicken
4 frozen chicken breasts, boned, skinned
1 Tbsp butter
1/4 cup lemon juice
2 Tbsp soy sauce
1 tsp honey
1 tsp lemon zest
1 tsp thyme
1/2 tsp black pepper
Preheat oven to 375. Combine soy sauce, melted butter, lemon juice, lemon zest, honey, pepper, thyme together in a small mixing bowl.
Lightly coat small baking dish with non-stick spray, and arrange frozen chicken in a single layer. Spoon sauce mixture over each breast. Cover loosely with foil and bake 25 min. Turn each piece over baste well, and continue cooking for an additional 20 minutes. Remove chicken and spoon pan juice over each piece.
**Note: I got this recipe from the back of my frozen chicken bag. We love it. I can make it fast and leave it while I handle the kids. I have substituted orange juice for the lemon juice, and brown sugar for the honey, and it is still great !!!
