Cream Cheese Mixture:
• 8 oz. Cream Cheese, softened
• 1 Egg
• 1/3 Cup Sugar
• 1/8 teasp. salt
• 1 Cup Mini Chocolate chips

  Cake Mixture

• 1 1/2 Cups Flour
• 1 cup Sugar
• 1/4 Cup Cocoa
• 1/4 teasp. Salt
• 1 teasp. Baking Soda
• 1 Cup Water
• 1/3 Cup Oil
• 1 Tlbsp. Vinegar
• 1 teasp. Vanilla

  Directions:

• Preheat oven to 350 degrees. Line muffin pans with paper liners.
• Beat cream cheese, egg, sugar, and salt. Stir in chips and set aside.
• Sift flour, sugar, cocoa, salt, and baking soda. Stir in water, oil, vinegar and vanilla and beat until smooth.
• Layer muffin cups as follows; 1/3 full batter, 1/2 teaspoon cream cheese mixture, 1/3 batter. repeat until all is used.
• Bake 15 to 20 minutes. Cool in pan
• Yields 48 Mini Cupcakes
