Chicken Cacciatore



1 whole chicken breast - deboned
1 can (28 ounces) diced tomatoes
1 can (6 ounces) tomato paste
1 cup chopped onion
1 large green bell pepper, chopped
8 ounces sliced mushrooms
2 cloves garlic, crushed
1 tspn dried basil
1 1/2 tspn dried oregano
2 tspn chicken boullion
1 lb cooked spaghetti

Add boullion to 2 cups of water. Bring water to a boil. Add chicken. Reduce heat and simmer for 1 hour or until chicken is tender. Remove and seperate into bite sized pieces.

While chicken is cooking, combine tomatoes, tomatoe paste, onion, pepper, mushrooms, garlic and spices. Cover and bring to a boil, reduce heat and simmer for 45 minutes. Add chicken and simmer for another 30 minutes.
Serve chicken cacciatore over hot spaghetti.
