Coffee County was created in 1854, primarily from neighboring Telfair county and also parts of Clinch, Irwin and Ware counties.The Georgia Legislature defined the boundaries of the new county and then instructed the leaders of the county to hold an election for county officers, divide the county into Militia districts and to purchase land for the building of a courthouse and public buildings.
According to W. P. Ward, Coffee county was organized on April 17, 1854 by the Justices of the Inferior Court. The first officers of the county were:
B. H. Tanner,Sheriff; Thomas Mobley, Ordinary; John W. Matchet, Tax Receiver; Sim Parker, Coroner; and a Mr. Carver, Surveyor. Whitington S. Moore, servered as the Clerk of both the Superior and Inferior Court.
General John Coffee, who was born in Hancock Co. Ga., is the person for which the county is named. He was a renown Indian fighter,and a leader of the Ga. militia. He was responsible for the building of the Coffee Road which in 1854, formed the western boundary of the county. He died in 1836.
