The Dandelion is a perennial plant found almost anywhere. Most people spend a lifetime tryig to eradicate this so called 'weed'.
The Dandelion has many uses; the two most important being the promotion of bile and the removal of excess water from the body. The root is especially helpful in aiding secretion and excretion from the body by acting as a 'poison' removal as well as a tonic and stimulant.
Dandelion leaves are popular and healthful as salad greens, especially in springtime and the dried roots can be used as a coffee substitute. The can also be added to beer and wine. Aside from the dandelion being a very powerful diuretic and stomach tonic, it is one of the best natural sources of potassium.
The roots are best collected between early summer and late summer when they are at their bitterest. It is best to split lengthwise before drying. The leaves can be collected anytime.
Dandelion Tea
5-6 dandelion leaves
boiling water
1 teaspoon honey (optional)
Remove any stems from the dandelion leaves. Break them into stips and place in the bottom of a mug. Pour on enough boiling water to fill the mug and let stand 5-10 minutes. Strain, and discard the leaves and drink. If prefered, honey can be added to sweeten the tea.
