If you are anything like me, you decide to make something for dinner, or god forbid BAKE and half way through the recipe you are following, you find out that you don't have that all important ingredient....can't drop everything and run out to the store, now can we....so this list is a real life saver in my house. I can't tell you the number of times I have had to refer to this!

Emergency Substitions!
For:Use:
baking powder/1 tsp1/4 tsp baking soda plus 1/2 tsp cream of tartar.
buttermilk/1 cup1 cup plain yogurt or 1 tbsp vinegar plus milk to equal 1 cup or 1 tbsp lemon juice plus milk to equal 1 cup.
cake flour/1 cup1 cup minus 2 tbsp sifted all-purpose flour.
chocolate,unswtnd/1 oz3 tbsp unsweetened cocoa plus 1 tbsp butter or margarine.
cornstarch/1 tbsp2 tbsp all-purpose flour.
corn syrup/2 cups1 cup granulated sugar.
cream,heavy/1 cup1/3 cups butter plus whole milk to equal 1 cup.
cream,lite/1 cup1 1/2 tbsp butter plus whole milk to equal 1 cup.
cream,whipped/1 cupSame as Cream,Heavy.
egg yolk/2 yolks1 whole egg(can be used for baking but not for a piecrust or a sauce).
egg,whole/1 egg2 egg yolks(for baking, 2 egg yolks plus 1 tbsp water).
herbs,fresh/1 tbsp1 tsp dried herbs.
honey/1 cup1 1/4 cups granulated sugar.
lemon juice/1 tbsp1 tbsp distilled white vinegar.
milk,skim/1 cup1/3 cup nonfat dry milk plus 3/4 cup of water.
milk,whole/1 cup1/2 cup evaporated milk plus 1/2 cup of water.
molasses/1 cup3/4 cup granulated sugar.
mushrooms,fresh/1 lb12 oz can of mushrooms, drained.
mustard,dry/1 tsp1 tbsp prepared mustard.
sour cream/1 cup3 tbsp butter plus buttermilk or yogurt to equal 1 cup.
sugar,brown/1 cup1 cup granulated sugar.
sugar,granulated/1 cup1 3/4 cups confectioners' sugar(do not substitute for baking).
tomato juice/3 cups1 1/2 tomato sauce plus 1 1/2 cups of water or 1 can(6 oz) tomato paste plus 3 cans of water, dash of salt and a dash of sugar.
tomato sauce/1 cup1 can(3oz) tomato paste plus 1/2 cup of water.
yogurt/1 cup1 cup buttermilk.

1 cup semisweet chocolate pieces6oz pkg semisweet chocolate pieces.
1 oz unsweetened chocolate1 square unsweetened chocolate.

1 cup chocolate wafer crumbs19 chocolate wafers.

1/2 cup butter or margarine1 stick(1/4 lb) butter or margarine.
6 tbsp cream cheese3oz pkg cream cheese.
1 cup cream cheese8oz pkg cream cheese.
1 cup crumbled blue cheese4oz crumbled blue cheese.
1 1/4 cups grated cheese1/4 pound hard cheese(Parmesan,Romano).
1 cup shredded hard cheese(Cheddar,Swiss4oz hard cheese.
1 1/4 cups shredded soft cheese(American,Monterey Jack)4oz soft cheese.
2 cups whipped cream1 cup heavy cream or 1 cup whipping cream.

1 to 1 1/4 cups almonds nutmeats1 lb almonds in shells.
3 to 3 1/2 cups chopped almonds1 lb almonds, shelled.
2 to 2 1/4 cups pecan nutmeats1 lb pecans in shells.
4 cups chopped pecans1 lb pecans, shelled.
1 1/2 to 2 cups walnut meats1 lb walnuts in shells.

2 to 2 1/2 cups cooked pasta1/4 lb dried pasta.
