Stuffed Green Peppers
- (for crock pot)
- 1 lb. Ground beef
- 1/3 c. rice, uncooked
- 1 chopped onion
- 1 tsp. Salt
- 2 c. stewed tomatoes
- 5 large green peppers
- ½ c. water
- Slice off top of green pepper, de-seed and wash; drain well. Salt cavity lightly. Combine meat, rice, onion, salt and
tomatoes; mix well. Stuff peppers 2/3 full. Arrange peppers in crock pot(can be stacked). Pour in water; cover and cook on
low for 6 - 8 hours. Or on high 3 hours. Serve on a bed of rice and pour tomato sauce over top.
Stuffed Burger Bundles
- 1 c. herb seasoning stuffing mix
- 1/3 cup evaporated milk
- 1 lb. Ground beef
- 1 (10 ½ oz.) Can cream of mushroom soup
- 2 tsp. Worcestershire sauce
- 1 tbsp. Catsup
- Prepare stuffing according to package directions. Combine milk and meat; divide into 5 patties. On waxed paper, pat each
into 6 inch circles. Put 1/4 c. stuffing in center of each; draw meat over stuffing and seal. Place in a 1 ½ quart casserole
dish. Combine remaining ingredients; heat and pour over meat. Bake uncovered at 350o for 45 minutes.
Beef Stroganoff
- 1 ½ lbs. Round steak, cut in thin strips
- 1/4 c. flour
- salt and pepper to taste
- 1/4 c. butter
- 4 oz. Sliced mushrooms, drained
- ½ c. chopped onion
- 1 small clove garlic, minced
- 1 can beef broth
- 1 c. dairy sour cream
- Dust meat strips with flour, salt and pepper. In a large skillet, brown meat in butter. Add mushrooms, onion, and minced
garlic; brown lightly. Stir in beef broth. Cover; cook about 1 hour, stirring now and then. Gradually stir in sour cream; cook
over low heat for 5 minutes. Serve over noodles(about 3 cups).
Enchilada Casserole
- 1 chopped onion
- 2 cloves garlic, minced
- 1 ½ lbs. Ground beef
- 1 small can minced olives
- 1 tbsp. Vinegar
- 2 tbsp. Chili powder
- salt and pepper to taste
- 3 ½ c. water
- 1 (7 oz) box saltine crackers
- ½ lb. Grated cheese
- ½ c. water
- 3 tbsp. Flour
- Brown onion, garlic and meat until done. Add olives, vinegar, chili powder, salt, and pepper. Add 3 ½ cups water. Make a
paste with ½ c. water and flour and use top thicken above meat mixture. Line a 9x13 inch baking dish with crackers and
add alternate layers of meat, grated cheese, crackers, and mea; ending with cheese. Bake in 350o oven 20 minutes.
