Lemon-aid Sugar Cookies
- 3 c. sifted flour
- 1 c. butter or margarine
- 2 eggs beaten
- 4 tbsp. Frozen lemon-aid concentrate
- 1 c. sugar
- 1 tsp. Vanilla
- 1 tsp. Baking soda
- Cream together flour, sugar and butter. Add eggs and soda. Stir in lemonade. Add vanilla. Chill dough for 1 hour. Roll out
and cut in shapes with cookie cutters. Sprinkle with colored sugar. Bake on a greased cookie sheet 8 - 10 minutes in a 400o
oven. Instead of the sugar on top they can be frosted.
- Variation: Orange Sugar cookies - substitute orange juice for the lemon-aid and add 2 Tbsp. Grated orange peel.
Butterscotch Oatmeal Cookies
- 1 ½ c. brown sugar, firmly packed
- 1 c. granulated sugar
- 1 c. shortening
- 1 tsp. Vanilla
- 1 tbsp. Milk
- 1 c. sifted flour
- 1 tsp. Baking soda
- 1 tsp. Baking powder
- 1 tsp salt
- 2 c. uncooked oatmeal
- 1 c. raisins
- 1 c. chopped nuts
- 1 c. chocolate or butterscotch chips
- 2 eggs
- Cream sugar and shortening; blend in eggs, vanilla and milk, until smooth. Sift together dry ingredients and add all at once
to egg mixture. Beat until smooth. Add oatmeal; mix well. Add raisins, nuts, and chocolate or butterscotch chips. Drop by
teaspoonfuls onto cookie sheet, about 2" apart. Bake 8 - 10 minutes in 350o oven.(6 doz.)
Cherry Oatmeal Cookies
- 1 ½ c. shortening
- 3 eggs
- 2 tsp. Baking soda
- 1 tsp. Vanilla
- 4 c. flour
- 1 c. coconut
- 6 oz. Chocolate chips
- 1 c. cherries cut up
- ½ tsp. Salt
- 2 c. sugar
- 2 tsp. Cinnamon
- 1 lb. Raisins
- 2 c. water
- 3 c. rolled oats
- 1 c. nuts(chopped)
- Boil raisins for 10 minutes in 2 c. water. Set aside. Combine shortening, sugar and eggs; beat well. Sift 3 times: flour,
cinnamon, soda, salt. Ad alternately to egg mixture with 2 c. liquid from raisins. Add raisins, oatmeal, nuts and cherries.
Add coconut and vanilla. Mix well. Drop by teaspoonfuls on greased cookie sheet. Bake 12 minutes in 375o to 400o oven.
Raspberry Bars
- ½ c. butter
- 1 c. flour
- 1 tsp. Baking powder
- 1 egg
- 1 tbsp. Milk
- Raspberry jam
- Cream butter, flour and baking powder. Add egg and milk. Press into an 8 x 8 inch pan. Spread with 4 tbsp. Raspberry jam.
- Top with:
- 1 c. sugar
- 1 tbsp. Butter
- 1 egg
- 2 c. coconut
- 1 tbsp vanilla
- Mix sugar and butter; add egg, coconut and vanilla. Bake 325o 25 minutes. Cool and cut into bars to serve.
Rocky Road Brownies
- 3 squares unsweetened chocolate
- 1 c. butter
- 4 eggs
- 2 c. sugar
- 2 c. flour
- ½ tsp. Salt
- 2 tsp. Vanilla
- nuts, optional
- 2 c. mini marshmallows
- Melt chocolate and butter together and cool. Beat the sugar and eggs together well, then add chocolate mixture and mix
well. Add flour, salt and beat together. Grease pan and bake for 20 minutes at 375o. Sprinkle marshmallows on top of hot
brownies and return to oven for a moment to puff marshmallows. Flatten marshmallows with a wet spoon.
