Carmel Popcorn Balls
1) 28 caramels
2) 2 tbsp water
3) 2 quarts salted popped popcorn
4) 1 tsp corn syrup(optional)
Melt caramels and water in a double boiler. Add syrup is desired. Pour over popped popcorn and toss well until well coated. Shape into balls and enjoy.
Pumpkin Ice Cream Pie Filling
(graham cracker crust)
1) 1 (18 ounce) can pumpkin pie mix
2) 1 pint vanilla ice cream(may use fat free)
3) ½ cup brown sugar
4) 2 tbsp margarine(may use fat-free)
Beat pumpkin mix and ice cream together. Spoon in a prepared graham cracker crust. Freeze 1 hour. I sauce pan heat brown sugar and margarine to boiling. Remove from heat and drizzle over pie. Freeze until firm. Let pie stand at room temperature 15 minutes before serving. 8 servings.
Pumpkin Pie
(unbaked pie shell)
1) 1 (16 ounce) can pumpkin
2) 1 (12 ounce) can sweetened condensed milk
3) 2 eggs
4) 1 tsp pumpkin pie spice
Combine all ingredients and mix well. Pour into pie shell. Bake 15 minutes at 425 degrees; then reduce heat and bake 35 - 40 minutes longer at 350 degrees. Let cool before serving.
