Summer Salad Recipes

Apple Coleslaw

2 cups cabbage, shredded
2 medium apples, cored and diced
1 (16 ounce) can crushed pineapple, drained
3/4 cup mayonnaise or Miracle whip salad dressing

Combine above ingredients, cover and refrigerate 1 hour or more before serving. Makes 8 servings.



Fruit Salad

1 (20 ounce) can pineapple chunks, drained
2 (11 ounce) cans mandarin oranges, drained
1 cup miniature marshmallows
1/3 cup mayonnaise or miracle whip salad dressing

Toss together above ingredients and refrigerate. Makes 6 servings.



Snow Pea Salad

2 cups snow peas, trimmed
1 red bell pepper, sliced
1 tsp toasted sesame seeds
½ cup Hidden Valley Italian Parmesan salad dressing

Blanch the snow peas and drain, running under cold water. Pat dry and refrigerate for an hour.
When ready to serve, place snow peas in a circle on individual plates. Arrange red pepper strips
between snow peas and sprinkle with sesame seeds., Drizzle salad dressing over top of each salad.
Makes 4 servings.



Fruit and Spinach Salad

1 (10 ounce) package cold water washed spinach, torn in bite sized pieces
1 large red delicious apple, cored and chopped
1 medium pear, cored and chopped
4 green onions sliced

Combine above ingredients and toss with a fruited vinaigrette dressing.
