2 cups flour
1 cup sugar
1 tablespoon baking powder
1/2 cup vegetable oil
1/2 cup water
2 teaspoons vanilla
8 egg whites
1 teaspoon cream of tartar
1 cup sugar
8 egg yolks
Sift together flour, sugar, and baking powder. Measure oil,
water, and vanilla.
In another bowl, beat egg whites and cream of tartar until they
stand up in peaks.
Gradually beat in a cup of sugar. Beat 2 minutes until very
stiff. Set aside.
Meanwhile make a well in the dry ingredients, add liquids, and egg
yolks.
Beat until smooth. Add this egg yolk mixture to the egg whites
gently folding
it with a spatula. Pour into tube pan. Bake at 325 degrees
for one hour.
Invert to cool. You can serve this cake plain with fresh strawberries
and cream.
Or, you can frost it for a special treat.
Fluffy Five Minute Frosting
2 egg whites
1 1/2 cups sugar
1/8 teaspoon salt
1/4 tsp. cream of tartar
1/2 cup cold water
1 tablespoon light corn syrup
Beat all ingredients together for 5 to 7 minutes in top of doble
boiler.
Food coloring can be added for a festive touch. Cake is good
covered
in coconut, if desired. This was our Birthday Cake (mine was
blue!).
