PA Dutch Pearl Tapioca


Dutch Pearl Tapioca Pudding

This is also known as "Fish Eye" Tapioca. The "pearls" are large round pieces of tapioca!

Ingredients:

1/3 cup Pearl Tapioca (soak in water overnight)
1 quart milk (4 cups)
3 egg yolks (or two eggs)
1/2 cup sugar
1 teaspoon vanilla

Combine sugar, egg, and tapioca in a saucepan and add milk. Cook until it starts to boil, stirring. Remove from heat and add vanilla. Eat warm or cold. Eva Koehler's recipe.
