Pineapple Nut Cookies

1/2 cup shortening
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup crushed pineapple
1/2 cup chopped peanuts
1 egg
1/2 teaspoon baking soda
1 teaspoon baking powder
2 cups flour
1 teaspoon vanilla

Cream the shortening and sugars until fluffy.  Add the rest of the ingredients, one at a time.
Drop by teaspoonsful onto cookie sheet.  Bake 8 to 10 minutes at 350 degrees, until golden brown.

These are  little fruit and nut cakes.  They store well in covered tins.
My mother made these every year for Christmas.  She even doubled the recipe.
