Fried Mozarella

Strips or triangles of cheese deep-fried with a crumb coating. Just delicious.
Mozarella cheese slices All-purpose flour Fat for deep frying Black olives |

Separate cheese slices into groups of 4, keeping slices in each group tight together. Cut each group in half through centre then in half again making 4 thick strips. Repeat with other groups of cheese making 16 strips in all. A solid piece of mozarella may be used instead. Try to cut uniform slices. Triangles may be made by cutting cornerwise.
Measure flour into flat dish.
Combine eggs, water, salt and pepper in cereal bowl. Beat with a fork until blended.
Measure breadcrumbs into another flat dish. Dip cheese strips in flour. Dip in egg, then in breadcrumbs. Be sure every spot is covered with crumbs. Line with waxed paper a pan large enough to hold cheese in single layer. Lay cheese on waxed paper. Chill for one hour or more.
Gently fry a few cheese strips at a time in hot 375F (190C) fat, browning both sides. Remove with slotted spoon to drain on paper towels. Place 2 strips on each plate.
Garnish with one black olive, one green olive and one sprig of parsley.
Serves 8.
